Ingredients: 175g/6oz Belly of Pork 325g/12oz Pig's Liver 1 Pig's Kidney 1 Large Onion, chopped Salt and Pepper 50g/2oz Breadcrumbs 1 Egg 1 teasp Dried Thyme 1 teasp Dried Sage
Instructions
1. Place the pork, liver, kidney, onion, salt and pepper into a pan with enough water to half cover. Bring to the boil and simmer for 40 minutes.
2. Preheat the oven to 220C, 425F, Gas mark 7.
3. Drain the meats and very finely chop or mince. In a bowl, thoroughly mix the minced meats with the remainder of the ingredients then form into balls.
4. Well grease rounds of parchment paper large enough to wrap each faggot, place a ball on an individual piece of paper. Pull up the sides and securely the tops with string to make individual parcels. (The traditional method would have been to use pig's caul - a membrane obtained from the pig's stomach.)
5. Alternatively, just spread the mixture in a greased ovenproof dish or tin, mark into portions and cover with greased foil.
6. Place the individual parcels or tin on a baking tray and bake in the oven for 1 hour. Serve hot.
