Kidney and Bacon Brochettes HT MC 30mins Serves 4 Hot Offal Pork Vegetables Main CourseIngredients: 225g/8oz Rindless Streaky Bacon 450g/1lb Lamb Kidneys, quartered 175g/6oz Button Mushrooms Salt and Black Pepper 3 tbsp Olive Oil 50g/2oz Dried Breadcrumbs Instructions 1. Cut the bacon into 2.5cm/1 inch squares. Put into a pan, cover with cold water and bring to the boil. Remove from heat and drain. Preheat grill.
2. Thread bacon, kidneys and mushrooms on to skewers. Season. Brush with oil and grill for 10 minutes, turning occasionally.
3. Brush kebabs with oil again and roll in breadcrumbs to coat. Grill for a further 5 minutes or until golden. Garnish with lemon wedges and serve immediately.
