Lambs' Liver Chinese Style

tbsp Soy Sauce
teasp Ground Ginger
fl.oz. White Wine (check manufacture)
tbsp Demerara Sugar
Carrots, cut into matchsticks
Sticks Celery, sliced diagonally
Garlic Clove, crushed
Blend together the cornflour, soy sauce and ginger in a bowl. Add the white
wine, vinegar, water
and sugar and reserve.
Cut the liver into 12mm/½inch strips. Peel the cucumber and cut into 2.5cm/1
Heat the oil in a frying pan. Add the peeled and crushed garlic, liver, celery and
carrots and stir-fry for 8-10 minutes. Stir the
reserved sauce mixture and add to pan with the cucumber and seasoning. Stir and simmer for 3 minutes.
