Liver with Apples HT MC Finnish 45mins Serves 4 Hot Offal Fruit Alcohol Main Course Eggless Finland Scandinavian Scandinavia EuropeIngredients 2 Cooking Apples, peeled, cored and thickly sliced 75g/3oz Butter 1 tbsp Sugar 450g/1lb Chicken Livers Salt and Black Pepper 4 tbsp Chicken Stock 2 teasp Cornflour 150ml/5fl.oz. Cider 1 tbsp Redcurrant Jelly 1 teasp Lemon Juice Instructions 1. Heat half the butter in a pan and add the apples. Sprinkle with sugar and cook for about 10 minutes over a low heat, stirring frequently but without breaking up the apples.
2. Heat the remaining butter in a pan and stir-fry the livers over a high heat for 5 minutes until brown all over. Season, add stock and cook for a further 5 minutes over a moderate heat.
3. Meanwhile, place the cornflour in a saucepan, stir in the cider, redcurrant jelly and lemon juice. Bring to the boil, stirring, and cook for 5 minutes. Pour into a sauce boat.
4. To serve - arrange the apples in a serving dish, spoon the livers and juices on top and serve the sauce separately.
