Sweetbreads with Lemon

Small Onion, sliced
Prepared Lambs' Sweetbreads
and White Pepper
tbsp Lemon Juice
Fresh Chicken Stock
Heat the butter in a frying pan, add the onion and fry till transparent.
Cut the sweetbreads into slices. Add to the onions with salt and pepper and fry
gently for about 10 minutes, turning frequently, till tender.
Remove the pan from the heat. Lift out the sweetbreads with a draining spoon, arrange
on a warmed serving dish and keep hot.
Beat the egg yolks, lemon juice and stock together with a fork. Add to the pan, return
to a low heat and cook stirring till the mixture thickens. Season to taste, pour
over the sweetbreads and serve immediately.
