Sweetbreads with Lemon H T MC French 30minsServes 4 Hot Offal Main course Gluten Wheat Free France Europe Ingredients: 1 Small Onion, sliced 75g/3oz Butter 450g/1lb Prepared Lambs' Sweetbreads Salt and White Pepper 2 Egg Yolks 2 tbsp Lemon Juice 150ml/5fl.oz. Fresh Chicken Stock Instructions 1. Heat the butter in a frying pan, add the onion and fry till transparent. 2. Cut the sweetbreads into slices. Add to the onions with salt and pepper and fry gently for about 10 minutes, turning frequently, till tender. 3. Remove the pan from the heat. Lift out the sweetbreads with a draining spoon, arrange on a warmed serving dish and keep hot. 4. Beat the egg yolks, lemon juice and stock together with a fork. Add to the pan, return to a low heat and cook stirring till the mixture thickens. Season to taste, pour over the sweetbreads and serve immediately.
