Tongue en Papillotes HT MC French 50mins Serves 4 Hot Offal Pork Fish Herbs Main course Gluten Wheat Dairy Free Eggless France Europe
Ingredients 4 Rashers Bacon, rind removed 4 Large thin sliced Cooked Tongue 2 teasp Parsley 2 teasp Shallots, finely chopped 2 teasp Capers 1 teasp Freshly Chopped Tarragon 1 Small tin Anchovies, chopped and oil reserved Black Pepper
Instructions
1. Preheat the oven to 220C, 425F, Gas mark 7. Cut four rectangles of greaseproof paper slightly wider and at least 10cm/4 inches longer than the slices of tongue.
2. In a bowl, mix the parsley, shallot, capers, tarragon, anchovies, black pepper and reserved anchovy oil.
2. Place one quarter of this mixture on each slice of tongue and roll tightly. Roll one piece of bacon around each tongue then wrap firmly in the greaseproof paper, folding over the edges to form a parcel.
3. Place on a baking tray and bake for 15-20 minutes.
4. Serve immediately, either straight from the parcels or removed.
