Bacon, rind removed
4 Large thin
sliced Cooked Tongue
Shallots, finely chopped
2 teasp Capers
Freshly Chopped Tarragon
1 Small tin
Anchovies, chopped and oil reserved
1. Preheat the
oven to 220C, 425F, Gas mark 7. Cut four rectangles of greaseproof
paper slightly wider and at least 10cm/4 inches longer
than the slices of tongue.
2. In a bowl,
mix the parsley, shallot, capers, tarragon, anchovies, black pepper and
reserved anchovy oil.
2. Place one
quarter of this mixture on each slice of tongue and roll tightly. Roll one
piece of bacon around each tongue then wrap firmly in the greaseproof paper,
folding over the edges to form a parcel.
3. Place on a
baking tray and bake for 15-20 minutes.
