Parma Melon Recipe

A simple starter using a classic combination of Italian cured ham and fresh melon, drizzled with a sweet balsamic dressing.

Ingredients

˝ a  Honeydew Melon
4 Thin slices of Parma Ham (Proscuitto)
3 tbsp Balsamic Vinegar
2 tbsp Honey
1 tbsp Olive Oil
Salt and Black Pepper
6 x 15cm/6-inch Chives Stems

Instructions

 

1. Deseed and peel the melon, then cut into 8 wedges about 1cm/˝-inch thick. Arrange two slices on each of four small serving plates.

 

2. Roll the Parma ham slices and place one roll on top of the plates of melon.

 

3. Chop 4 of the chive stems and sprinkle over the melon.

 

4. Place the vinegar, honey, olive oil, salt and pepper in a small bowl, whisk well then drizzle over the melon.

 

5. Cut the remaining two chive stems in half and use to garnish each plate before serving.

Tips, Options and Substitutions

 

Substitute the honeydew melon with other yellow or green melons
Substitute the Parma ham with Serrano
Prepare ahead - Cut and plate up the melon, ham and chives, cover with clingfilm and refrigerate. Make the dressing, cover and set aside until ready to serve
