Tongue Pate en Papillotes

An easy to prepare starter which has a fabulous presentation and piquant flavour, suitable for dinner parties or special occasions

Ingredients

2 Rashers Rindless Bacon
2 Medium slices Cooked Tongue
1 tbsp Freshly chopped Parsley
2 sprigs Thyme Leaves
4 tbsp Shallots, finely chopped
2 teasp Capers
4 tinned Anchovy fillets, chopped and 1 tbsp of the oil

Fresh Lemon Juice
Black Pepper

Instructions

 

1. Preheat the oven to 220C, 425F, Gas mark 7. Cut four rectangles of parchment or greaseproof paper into 20cm/8-inch squares.

2.Place all the ingredients in a small food processor and process until well mixed but not too smooth.

3. Place one quarter of the mixture in the centre of the paper squares. Mix together the anchovy oil and lemon juice then drizzle over the parcels.

 

4. Gather up the edges and tie firmly with string to form money bags, then place on a baking tray and bake for about 15 minutes.

Serving Suggestions

 

To serve - transfer the parcels to individual serving plates and serve immediately with French bread or thin slices of toast or crostini

 

 

Tips, Options and Substitutions

 

Serve a few baby salad leaves on the side

Substitute the capers with chopped olives

Can be prepared ahead of time and refrigerated until ready to cook.
