Ingredients 48 Medium Cooked Prawns (Shrimp), shelled but tails in tact
For the Sauce 400g/14oz Cranberry Sauce 90ml/3fl.oz. Chilli Sauce 2 tbsp finely chopped Onion 2 tbsp Worcestershire Sauce 2 tbsp Red Wine Vinegar 1 teasp ready made English Mustard
Instructions
1. Place all the sauce ingredients in a medium saucepan, slowly bring to the
boil, stirring then reduce heat and simmer for 10 minutes or until onion is
soft, stirring frequently.
2. Remove from the heat, cover and allow to cool to room temperature then
transfer to a small serving bowl and refrigerate until chilled.
3. To serve - Fill a large bowl with crushed ice, nestle the bowl of
cocktail sauce in centre of ice and arrange the prawns on the ice around
bowl of sauce.
