2-3 Ice Cubes
1 Egg Yolk
Lemon Peel to
1. Crack the ice (but don't crush it into too small pieces) and place in
a shaker with the egg yolk, rum and cointreau.
2. Shake very well and strain into a tall tumbler. Top up with sparkling
garnish with a spiral of lemon peel.
N.B. Don't be tempted to mix direct in the serving glass, as this drink
with the ice. There's nothing worse than having watered down cocktails !
