Ingredients:
20 Quail Breast Fillets
4 Garlic Cloves, crushed
1 teasp coarsely ground Black Pepper
1 tbsp Olive Oil
25g/1oz Butter
2 tbsp Olive Oil for frying
Instructions
1.
Halve each quail breast. Place in a bowl together with the garlic and pepper.
Mix well, cover and refrigerate for at least 1 hour.

Heat the extra oil and butter in a large frying pan. Add the quail and sauté
for about
2 minutes on each side or until well browned and tender. Serve immediately.
This can be prepared one day ahead. Cover the uncooked marinated quail breasts and refrigerate until ready to serve.
