Student Curried Beans with Rice Veg HT MC 15mins
Serves 1 Hot Vegetarian Vegan Pulses Grains Spices Dried Fruit Main Course Gluten Wheat Dairy Free Eggless
This is an easy, filling and cheap meal.
Ingredients 75g/3oz Rice Salt 1 tin Beans e.g. Kidney, Cannellini or Baked Beans 1 teaspoon Curry Powder 2 tablespoons Sultanas (optional)
Instructions
1. Three quarters fill a medium sized saucepan with water and bring to the boil. Add the rice and some salt, bring back to the boil then reduce the heat and simmer for about 10 minutes or until the rice is tender .
2. Meanwhile place the beans, curry powder and sultanas if using in a small saucepan and cook over a medium heat for 10 minutes, stirring from time to time.
3. Once cooked, drain the rice very well in a colander, transfer to a plate and top with the bean mixture.
