Student Garlic & Mushroom Pasta Veg HT MC 20mins Serves 1 Hot Vegetarian Vegetables Pasta Main Course Eggless
Ingredients 1 - 2 tablespoons Olive Oil 100g/4oz Mushrooms, thickly sliced100g/4oz Short cut Pasta e.g. Macaroni, Conchiglie (shells) The Juice of ½ a Lemon 1 Garlic Cloves, chopped 1 tbsp Fresh Parsley, chopped Salt and Black PepperInstructions 1. Melt the butter in a pan, add the mushrooms, cover and cook for 10 minutes, stirring occasionally.
2. Meanwhile bring a large pan of salted water to the boil, add the pasta and cook for 10-12 minutes.
3. Add the lemon juice and garlic to the mushrooms, cover and cook for a further 5 minutes, stirring occasionally. Add the parsley, salt and pepper and mix well.
4. To serve - drain the pasta well and toss in the sauce. Serve immediately.
