Student Pasta with Red Onion Sauce

1 Hot Vegetarian
Pasta Vegetables Herbs

1 tbsp Olive Oil
1 Garlic Clove, crushed
1 Red Onion, finely chopped
½ tablespoon Dried Parsley
teaspoon Dried Basil
and Black Pepper
Crème Fraîche or Double Cream
Bring a large pan of salted water to the boil, add the pasta and cook for 10-12 minutes.
Meanwhile, heat the oil in a saucepan, add the onion and garlic and fry
gently over a medium heat for 3-4
minutes, stirring from time to time, until golden.
3. Add the herbs, seasoning
and crème fraîche or cream, bring to the boil then reduce the heat to low and simmer
gently for 2-3 minutes.
To serve - drain the pasta well, transfer to a warmed serving dish and top with the sauce. Serve immediately.
