Hot Vegetarian Pasta Main Course Italy Europe
Salt and Pepper
2 tbsp Olive Oil
3 tbsp Parmesan Cheese, finely grated
freshly grated nutmeg
1 White Truffle, very thinly sliced
1. Bring a large
pan of water to the boil, add plenty of salt and the olive oil then add the
pasta and cook for 8- 10 minutes until just tender.
2. Drain the
pasta, leaving about 1 tablespoon of the cooking water in the pan. Return the
drained pasta to the pan and add the butter, parmesan, season with a little
pepper and nutmeg and toss well to coat the pasta.
3. To serve -
transfer to heated bowls and sprinkle with the thinly sliced white truffles.
