Four Cheese Fettucine Veg HT MC Italian 30mins Serves 4 Hot Vegetarian Pasta Herbs Main course Italy EuropeIngredients: 350g/12oz Fettucine 50g/2oz Butter 50g/2oz Flour 600ml/20fl.oz. Milk 25g/1oz Gruyere Cheese, grated 25g/1oz Mozzarella Cheese, sliced 100g/4oz Dolcelatte Cheese, diced 4 tbsp Fresh Parmesan, grated Salt and Black Pepper 1 tbsp Fresh White Breadcrumbs 2 tbsp Fresh Chives, chopped Instructions 1. Bring a large saucepan of salted water to the boil add the pasta and cook for 10 minutes.
2. Meanwhile, melt the butter in a large pan. Stir in flour and cook for 1-2 minutes, stirring continuously. Remove from the heat and gradually stir in milk. Return to the heat and cook, stirring until sauce is thickened.
3. Stir in cheeses, salt and pepper and cook gently for 2-3 minutes until melted.
4. To serve - drain pasta well then toss in hot sauce. Sprinkle with the chives.
