Frankfurters with Macaroni HT MC 25mins Serves 4 Hot Pork Pasta Vegetables Main course Eggless
This is n economical family friendly recipe which is ideal for a mid week supper. Ingredients 225g/8oz Short Cut Macaroni 8 Frankfurters 1 x 200g/7oz tin Sweetcorn 2 Spring Onions, chopped 30g/1 ½ oz Butter 30g/1 ½ oz Plain Flour 450ml/15fl.oz. Milk Salt and Black Pepper 225g/8oz Cheddar Cheese, grated 2 teasp Mustard 25g/1oz Freshly Grated Parmesan Cheese
Instructions 1. Bring a large pan of salted water to the boil, add the pasta and cook for 8-10 minutes until tender. 2. Meanwhile, preheat the grill to hot and cook the frankfurters in boiling water according to the instructions on the packaging. 3. Melt the butter in a pan, add the flour and cook for 1-2 minutes stirring. Gradually add the milk, stirring all the time, bring to the boil and cook until the sauce thickens. Remove from the heat and add the cheddar cheese, mustard, salt and pepper and stir until the cheese has melted. 4. Drain the pasta and return it to the rinsed out saucepan. Drained the frankfurters and cut into 2.5cm/1 inch pieces. Add to the macaroni together with the sweet corn, spring onions and sauce and mix well. 5. Transfer to a shallow flameproof dish, sprinkle with the parmesan cheese and grill until golden and bubbling. Serve immediately.
