Paraguayan Noodles with Sausage

Onions, finely chopped
Streaky Bacon, diced
Chorizo Sausage, sliced
x 400g/14oz tin Chopped Tomatoes
tbsp Tomato Paste
and Black Pepper
tbsp Grated Parmesan Cheese
Heat the oil in a saucepan add the onions and fry until soft and transparent.
Add the bacon and sausage to the pan and fry
over a moderate heat for 10 minutes then
add the tomatoes and juice and the tomato paste.
Pour in the stock and season with salt and pepper. Cover and simmer for 10
Preheat the oven to 200C, 400F, Gas mark 6 and grease a shallow ovenproof
dish. Bring a large pan of salted water to the
boil, add the noodles and cook for 5-10
minutes until tender. Drain thoroughly in a colander, return to the rinsed out
pan and add the butter. Toss well.
Spread half the noodles over the base of the greased dish and sprinkle with
half the Parmesan. Cover with half the sauce,
then the remaining noodles and the remaining
sauce. Sprinkle with the remaining cheese and bake in the centre of the
oven for about 15 minutes till golden. Serve
