Paraguayan Noodles with Sausage   HT  MC   S. American  60mins

Serves 4    Hot   Pork  Pasta  Main course    South America

 

Ingredients

2 Onions, finely chopped

3tbsp Oil

50g/2oz Streaky Bacon, diced

225g/8oz Chorizo Sausage, sliced

1 x 400g/14oz tin Chopped Tomatoes

1 tbsp Tomato Paste

150ml/5fl.oz. Chicken Stock

Salt and Black Pepper

350g/12oz Noodles

25g/1oz Butter

4 tbsp Grated Parmesan Cheese

 

Instructions

 

1. Heat the oil in a saucepan add the onions and fry until soft and transparent. Add the bacon and sausage to the pan and fry over a moderate heat for 10 minutes then add the tomatoes and juice and the tomato paste.

 

2. Pour in the stock and season with salt and pepper. Cover and simmer for 10 minutes.

 

3. Preheat the oven to 200C, 400F, Gas mark 6 and grease a shallow ovenproof dish. Bring a large pan of salted water to the boil, add the noodles and cook for 5-10 minutes until tender. Drain thoroughly in a colander, return to the rinsed out pan and add the butter. Toss well.

 

4. Spread half the noodles over the base of the greased dish and sprinkle with half the Parmesan. Cover with half the sauce, then the remaining noodles and the remaining sauce. Sprinkle with the remaining cheese and bake in the centre of the oven for about 15 minutes till golden. Serve immediately.
