Pasta with Cod
4 Hot Pasta Fish
Vegetables Main course Dairy Free Eggless
Capsicum, de-seeded and chopped
Stick Celery, chopped
tbsp Olive Oil
x 400g/14oz tin Chopped Tomatoes
˝lb Cod Fillets
and Black Pepper
short cut pasta (e.g. Macaroni)
Skin the fish and cut into 2.5cm/1 inch cubes. Heat the oil in a large pan, add the onion, green pepper and celery and sauté
for 5 minutes. Add the garlic and cook
for 1 minute stirring.
Stir in the stock, tomatoes and Cayenne pepper and bring to the boil. Boil, uncovered, for 20-25 minutes, stirring
occasionally until thickened.
Meanwhile, bring a large pan of salted water to the boil, add the pasta and cook for 10-12 minutes.
Add the cod and seasoning to the sauce and cook over a low heat for 5 minutes.
To serve - drain the pasta well, place on a warmed serving platter and spoon the sauce over the pasta. Serve immediately.
