Pasta with Cod HT MC 55mins Serves 4 Hot Pasta Fish Vegetables Main course Dairy Free EgglessIngredients 1 Green Capsicum, de-seeded and chopped 1 Stick Celery, chopped 2 tbsp Olive Oil 450ml/15fl.oz. Fish Stock 1 x 400g/14oz tin Chopped Tomatoes Pinch Cayenne Pepper 675g/1 ˝lb Cod Fillets Salt and Black Pepper 350g/12oz short cut pasta (e.g. Macaroni) Instructions 1. Skin the fish and cut into 2.5cm/1 inch cubes. Heat the oil in a large pan, add the onion, green pepper and celery and sauté for 5 minutes. Add the garlic and cook for 1 minute stirring.
2. Stir in the stock, tomatoes and Cayenne pepper and bring to the boil. Boil, uncovered, for 20-25 minutes, stirring occasionally until thickened.
3. Meanwhile, bring a large pan of salted water to the boil, add the pasta and cook for 10-12 minutes.
4. Add the cod and seasoning to the sauce and cook over a low heat for 5 minutes.
5. To serve - drain the pasta well, place on a warmed serving platter and spoon the sauce over the pasta. Serve immediately.
