Spaghetti with Sardines HT MC 25mins Serves 4 Hot Pasta Fish Nuts Vegetables Main course Eggless Ingredients: 1 tbsp Oil 25g/1oz Butter 1 Onion, chopped 1 x 400g/14oz tin Chopped Tomatoes 1 Garlic Clove, crushed ½ teasp Saffron, soaked in 4 tbsp boiling water Salt and Black Pepper 150g/5oz tinned Sardines 25g/1oz Pine Nuts 350g/12oz Spaghetti Instructions 1. Heat the oil and butter in a saucepan, add the onion and fry until soft. Add the tomatoes, garlic, saffron (with it's water), sardines, pine nuts, salt and black pepper and simmer gently for 20 minutes. 2. Meanwhile, bring a large pan of salted water to the boil, add the pasta and cook for 10-12 minutes until tender.
3. To serve - drain the pasta well and return to the rinsed out pan. Add the sardine mixture, mix well and serve immediately.
