Place the chopped apricots in a bowl, cover with boiling water and leave to soak
for 10 minutes.
Meanwhile, place the couscous in a large bowl and add enough boiling water to
cover by 6mm/¼ inch. Cover tightly with clingfilm and allow to stand for 10
minutes until cooked.
Drain the apricots well and add to the couscous, fluffing it up with a fork. Add
the remaining ingredients. Mix well and serve immediately.
