Apricot Couscous Veg HT ACC Moroccan 20mins
Serves 4 Hot Vegetarian Vegan Fruit Herbs Accompaniment Dairy Free Eggless Morocco North African Nth Africa
Ingredients 125g/+5oz Dried Apricots, 450g/1lb uncooked Couscous 1 tbsp Olive Oil 2 tbsp roughly chopped Coriander 100g/4oz Spring Onions, chopped
Instructions
1. Place the chopped apricots in a bowl, cover with boiling water and leave to soak for 10 minutes.
2. Meanwhile, place the couscous in a large bowl and add enough boiling water to cover by 6mm/¼ inch. Cover tightly with clingfilm and allow to stand for 10 minutes until cooked.
3. Drain the apricots well and add to the couscous, fluffing it up with a fork. Add the remaining ingredients. Mix well and serve immediately.
