Herbed Rice with Raisins Veg HT ACC 50mins plus standing
Serves 6 Hot Vegetarian Vegan Grains Herbs Dried Fruit Nuts Accompaniment Gluten Wheat Dairy Free Eggless
Ingredients For the Raisins 150g/+5oz Raisins 1 tbsp Balsamic Vinegar 60ml/2fl.oz. Extra Virgin Olive Oil 2 tbsp freshly chopped Thyme 2 Garlic Cloves, crushed Black Pepper For the rice 3 tbsp Olive Oil 2 tbsp Pine Nuts 1 Onion, finely chopped 400g/14oz Long Grain Rice 600ml/20fl.oz. Water ˝ teasp Ground Cinnamon Salt and Pepper 3 tbsp freshly chopped Dill 3 tbsp freshly chopped Mint 3 tbsp freshly chopped Parsley
Instructions
1. In a mixing bowl, mix together the raisins, vinegar, oil, thyme, garlic and pepper. Cover and set aside to stand for at least 2 hours at room temperature, stirring from time to time.
2. Heat ˝ a tablespoon of the olive oil in a frying pan, add the pine nuts and sauté gently for 2 minutes. Remove with a slotted spoon and set aside.
3. Add the remaining olive oil, and heat until hot. Add the onions and sauté, stirring, until golden.
4. Add the toasted pine nuts and rice and stir to coat then add the water and season with salt, pepper and cinnamon.
5. Bring to the boil, reduce the heat , cover and cook gently for 20 minutes or until all the water has been absorbed, adding a little more water if necessary.
6. Remove from the heat and allow to stand for 10 minutes.
7. Add the remaining ingredients, mixing well with a fork.
8. To serve - transfer to a warmed serving platter and garnish with the raisin mixture.
