Asia Ingredients 225g/8oz Long Grain Rice 50g/2oz Cooked Black Eyed Beans 120ml/4fl.oz. Water Salt 240ml/8fl.oz. Coconut Milk 2 Spring Onions (green and white parts), chopped Instructions 1. Place the rice, beans and water in a medium
saucepan, bring to the boil then cook for about 5 minutes, stirring from time to
time. 2. Add the coconut milk, mix well, bring to the boil
and cook for about 5 minutes, stirring frequently, until the coconut milk
has reduced. 3. Reduce the heat to very low, cover and cook for a
further 10-15 minutes or until the rice is cooked, shaking the pan half way
through to prevent sticking. 4. Add the chopped spring onion, stir through and serve
immediately.
