225g/8oz Long Grain Rice
50g/2oz Cooked Black Eyed Beans
240ml/8fl.oz. Coconut Milk

1. Place the rice, beans and water in a medium
saucepan, bring to the boil then cook for about 5 minutes, stirring from time to

and cook for about 5 minutes, stirring frequently, until the coconut milk
3. Reduce the heat to very low, cover and cook for a
further 10-15 minutes or until the rice is cooked, shaking the pan half way
through to prevent sticking.
4. Add the chopped spring onion, stir through and serve
