Malay Rice Roll
Veg CD ACC Malaysian 30mins plus cooling
Malaysian Name: Lontong
Serves 4-6 Cold Vegetarian Vegan Grains
Accompaniment Gluten Wheat Dairy Free Eggless Malaysia Asia Asian
Ingredients
450g/1lb Long Grain Rice
Boiling water
Salt
Instructions
1. Bring a large pan of salted water to the boil, add the rice and cook for
about 20 minutes until very tender.
2. Drain the rice well then transfer to a square dish. Whilst still hot, place a
layer of clingfilm over the rice, cover with a tea towel and press down firmly
until well compressed.
3. Remove the tea towel and place a weight over the rice. You can use a plate
with heavy tins on top. Allow to cool then refrigerate until chilled.
4. To serve - turn the rice out onto a clean work surface and cut into
5cm/2-inch cubes.
NB Traditionally, the rice is tightly
wrapped in banana leaves before it is cooled.
