240ml/8fl.oz. Water 
1 Green Capsicum (sweet Pepper) chopped

1 Large Onion, chopped

2 Sticks Celery, chopped
˝ teasp salt 
1 x 400g/14oz Tin Chopped Tomatoes
175g/6oz Long Grain Rice 
1 teasp Chilli Powder 
Black Pepper 
Dash Hot Pepper Sauce (check ingredients)


1. In a medium saucepan combine water, green pepper, onion, celery, and salt. Bring to the boil then reduce heat, cover and simmer for 5 minutes. 

2. Stir in the complete contents of the tin of tomatoes, rice, chili powder, pepper, and hot pepper sauce. 


3. Return to the boil, reduce heat, cover and simmer about 20 minutes or till rice is tender and liquid is absorbed.
