Pea Fritters Veg HT ACC

Serves 4-6 Hot Vegetarian Vegan Pulses

Ingredients
200g/7oz Dried Split Peas
2 Onions, finely chopped
2 fresh Red Chillies, finely chopped
1 teasp Ground Turmeric (check ingredients)
Salt
Oil for deep frying
Instructions
1. Place the split peas in a large mixing bowl, cover with plenty of cold water
and leave to soak overnight.
2. Drain the soaked peas well then transfer to a food processor and process to a
paste.
3. Add the remaining ingredients apart from the oil, mix well then form into
small balls about the size of a golf ball and slightly flatten to 12mm/ ½ -inch
thickness.
4. Heat the oil to 180C/350F then drop the fritters, one at a time into the oil
and fry until golden brown on all sides. You may have to do this in batches.
5. Drain on kitchen paper and serve hot as an accompaniment to soups or main
course dishes.
