Egyptian Name: Ruzz
Serves 4 Hot Vegetarian Vegan Vegetables
Grains Accompaniment Gluten Wheat Dairy Free Eggless

2 tbsp Oil
1 Onion, thinly sliced
2 Tomatoes, chopped
1 Large Green Capsicum (sweet pepper), finely chopped
1 Medium Carrot, grated
275g/10oz Long Grain Rice
Approx 600ml/20fl.oz. Water
Salt and Pepper
1. Heat the oil in a medium saucepan, add the onion, tomatoes, peppers and
carrot and sauté gently for 5 minutes, stirring from time to time. Remove from
pan with a slotted spoon and set aside.
2. Reheat the oil, add the rice and fry, stirring constantly, until the grains
are coated with oil.
3. Add the water, bring to the boil, then reduce the heat, cover and simmer for
10-15 minutes or until water is absorbed and rice is tender. Stir in the
vegetables and heat through.
