Creole Rice HT ACC Caribbean 35mins
Serves 4 Hot Pork Grains Vegetables Accompaniment Gluten Dairy Wheat Free
Ingredients 4 Thick rashers of Bacon, diced 2 Large Onions, chopped 2 tbsp Oil 1 Red Capsicum, (Sweet Pepper) deseeded and chopped 225g/8oz Long Grain Rice Salt and Black Pepper 300ml/10fl.oz. Tomato Juice 300ml/10fl.oz. Fresh Light stock
Instructions 1. Heat oil in a frying pan add the bacon and onions and fry for 5 minutes. Add the capsicum to the pan together with the rice and seasoning. Cook gently, stirring, for 2 minutes until the rice is coated with oil. 2. Stir in the tomato juice and stock and bring to the boil. Cover tightly and simmer for 15 minutes or until the rice is tender and the liquid is absorbed. Adjust the seasoning, fluff with a fork and serve immediately.
