Thick rashers of Bacon, diced
Large Onions, chopped
Red Capsicum, (Sweet Pepper) deseeded and chopped
Long Grain Rice
and Black Pepper
Fresh Light stock
Heat oil in a frying pan add the bacon and onions and fry for 5 minutes. Add the capsicum to the pan together with the rice
and seasoning. Cook gently, stirring,
for 2 minutes until the rice is coated with oil.
Stir in the tomato juice and stock and bring to the boil. Cover tightly
and simmer for 15 minutes or until the rice is
tender and the liquid is absorbed. Adjust
the seasoning, fluff with a fork and serve immediately.
