Indonesian Rice Veg HT ACC 20mins
Serves 4 Hot Vegetarian Vegan Grains Dried Fruit Nuts Vegetables Spices Accompaniment Gluten Wheat Dairy Free Eggless Indonesia Asia Asian
Ingredients 250g/9oz Long grain Rice Salt 2 tbsp Oil 2 Apples 1 Onion, chopped 3 tbsp Sultanas 2 tbsp Flaked Almonds 50g/2oz Mushrooms, sliced 50g/2oz Black Olives 50g/2oz Pimento stuffed Green Olives 2 teasp Brown Sugar 1 tbsp Curry Powder (check ingredients)
Instructions
1. Put the rice in a saucepan of boiling salted water and cook for 15 minutes or until tender.
2. Meanwhile, chop the apples, reserving a few slices for garnish. Heat the oil in another saucepan and add the chopped apple and onion. Cook until the onion is transparent and soft.
3. Stir in the sultanas, almonds sliced mushrooms and olives and cook for a few minutes. Add the salt, sugar and curry powder. Mix well and cook for 3-4 minutes.
4. Add the drained rice and mix well. Serve hot.
