Pea Pilau Rice Veg HT ACC 35mins Serves 4 Hot Vegetarian Grains Vegetables Spices Accompaniment Gluten Wheat Free Eggless Ingredients 90ml/3fl.oz. Vegetable Oil 2 Small Onion ˝ Cinnamon Stick, broken up 12mm/˝ inch piece Fresh Ginger, chopped 1/4 teasp Chilli PowderA pinch Ground Turmeric ˝ teasp Cumin Seeds Salt 300g/11oz Long Grain Rice 200g/7oz Frozen Peas 25g/1oz Butter
Instructions 1. Heat the oil in a large saucepan over a medium-low heat, chop one of the onions and add to the pan together with the cinnamon, ginger, chili powder, turmeric, cumin seeds and salt and sauté gently for 10 minutes. 2. Add the water and bring to the boil then add the rice, cover and simmer for 10 minutes. Add the peas, stir well and cook for a further 10 minutes, until all the liquid has been absorbed and the rice is tender. Add a little more water if necessary. 3. Meanwhile, slice the remaining onion. Melt the butter in a frying-pan and add the sliced onion. Fry for about 10 minutes, until brown and crisp, stirring frequently. 4. To serve - transfer the rice to a warmed serving dish and spread the hot onion and butter over the top. Serve immediately.
