1 x 1.2kg/2˝ lb Joint Bacon or Gammon
1 Large Carrot,
1 Small Onion,
cut into wedges
1 Bay Leaf
1 Medium Whole Green Cabbage
4-6 whole Peppercorns
1. Place the
joint in a large saucepan, add the peppercorns, carrot, onion and bay leaf,
cover with cold water and bring to the boil
2. Remove any scum which floats to the top then reduce the heat to very low,
cover and simmer very gently so the water is just bubbling, for 1 ˝ hours,
topping up the level with extra boiling water as necessary.
3. Cut the cabbage into quarters and add to saucepan and continue to cook gently
for 20-30 minutes.
