Sesame Pork en Papillote Recipe

Tender strips of pork with fragrant ginger, sesame and coriander topped with julienne vegetables and cooked in a parchment parcel


Serves 4

350g/12oz Boneless Pork Fillet or Loin
1 tbsp Sesame Oil
2 tbsp Orange Juice
2 tbsp Dry Sherry
2 tbsp Soy Sauce
2 teasp Sesame Seeds
5cm/2-inch piece of Fresh Ginger, grated
2 Garlic Cloves, crushed
2 tbsp Vegetable Oil
2 Small Carrots, cut into julienne (very thin strips)
4 Spring Onion, cut into Julienne (very thin strips)
4 tbsp Freshly Chopped Coriander



1. 1. Preheat the oven to 200C, 400F, Gas Mark 6. Cut the pork into strips about 2.5cm/1-inch thick and 5cm/2-inches long, place in a bowl together with the sesame oil, orange juice, sherry, soy sauce, sesame seeds, ginger and garlic and mix well. Set aside.

2. Take four pieces of parchment paper about 45cm/18-inches square, fold each in half and cut into the shape of your choice such as a heart or oval. See picture below. Open up the papers, brush one side of each with a little vegetable oil, leaving a border about 5cm/2-inches wide.

3. Remove the pork from the bowl with a slotted spoon, reserving marinade, then place pork on the greased halves of each parchment parcel close to the fold, making sure you leave the border clear.

4. Arrange the carrots and spring onions over the pork, spoon the reserved marinade over the top and sprinkle with the fresh coriander.

5. Fold over remaining half of the paper to cover the pork, lining up the edges then fold over the edges in little pleats crimping as you work around the parcel to seal well. (See pictures below) Place the parcels onto a baking tray and bake for 20 minutes until bags are puffed and browned.
