Bacon and Bean Hotpot
Serves 4 Hot
Pork Vegetables Herbs Stew Main course Gluten Wheat Free
lb Tendersweet Bacon Joint
oz Fresh or Frozen Green Beans
lb medium sized Potatoes, sliced
teasp Dried Mint
teasp Dried Mixed Herbs
Melt the butter in a saucepan and gently fry the onions for 4-5 minutes. Cut the
bacon into 2.5cm/1 inch cubes then add to the onions and brown.
Pour in the stock, cover and cook for 1 hour.
Cut the beans into short lengths and add to the pan together with the remaining
ingredients. Cook for a further 30 minutes or until the potatoes are done.
