Bacon and Sweet Potato Casserole

Sweet potatoes, peeled and thinly
350g/l2oz Piece of Bacon, cut into 12mm/1/2inch
x 225g/8oz tin Pineapple Rings
Large Onion, sliced
teasp Lovage Seeds
tbsp Fresh Brown Breadcrumbs
Preheat the oven to 180C, 350F, Gas mark 4 and grease an ovenproof dish. Drain the pineapple, reserving half the syrup,
and cut each slice into quarters.
Place half the potatoes in the ovenproof dish, top with the bacon, then the onion, then the pineapple and finally the
remaining potatoes. Pour the reserved syrup
over the top then sprinkle with pepper, crushed lovage seeds and breadcrumbs.
Dot with butter then bake in oven for 40-45 minutes or until the surface is golden brown. Serve immediately.
