Bacon and Sweet Potato Casserole HT MC 50mins Serves 4 Hot Bacon Fruit Vegetables Main course Ingredients: 450g/1lb Sweet potatoes, peeled and thinly sliced A 350g/l2oz Piece of Bacon, cut into 12mm/1/2inch cubes 1 x 225g/8oz tin Pineapple Rings 1 Large Onion, sliced Freshly-ground Black Pepper 1 teasp Lovage Seeds 2 tbsp Fresh Brown Breadcrumbs 25g/loz Butter Instructions 1. Preheat the oven to 180C, 350F, Gas mark 4 and grease an ovenproof dish. Drain the pineapple, reserving half the syrup, and cut each slice into quarters. 2. Place half the potatoes in the ovenproof dish, top with the bacon, then the onion, then the pineapple and finally the remaining potatoes. Pour the reserved syrup over the top then sprinkle with pepper, crushed lovage seeds and breadcrumbs. 3. Dot with butter then bake in oven for 40-45 minutes or until the surface is golden brown. Serve immediately.
