Bacon Batter Cakes HT MC British 30mins plus resting
Serves 4 Hot Bacon Main Course Britain Europe Ingredients 100g/4oz Flour 2 Eggs, beaten 300ml/10 fl.oz. Milk A pinch of freshly Grated Nutmeg 1 tbsp Oil 1 tbsp Butter 8 Slices Streak Bacon, halved 8 Button Mushrooms, sliced Salt and Black Pepper 1 teasp freshly chopped Thyme
Instructions 1. Place the flour, salt, eggs and milk in a bowl and whisk thoroughly to a smooth batter. Add the nutmeg and stir in the oil. You can now leave the batter to rest for up to 30 minutes if desired. 2. Heat the oven to 220C, 425F, Gas mark 7. 3. Place a little butter in each hollow of a 4-hole Yorkshire pudding tin and allow to melt over a low heat on the hob. Add 4 pieces of bacon to each hollow and fry until crisp. Halfway through cooking, add the sliced mushrooms. Season to taste with freshly ground black pepper and thyme. 4. Remove the tin from the heat and pour in the batter. Bake immediately in the oven for 15 minutes or until the batter is puffy and golden brown.
Serve immediately with onion gravy and your choice of vegetable accompaniments.
