Boneless Pork Loin or Belly Joint
tbsp Ground Cumin
tbsp Chili Powder
teasp Ground Coriander
teasp Ground Red Chilli Pepper
teasp Ground Black Pepper
teasp Ground Cinnamon
teasp Brown Sugar
Wash the loin of pork and pat dry with kitchen paper. Preheat the oven to 180C,
350F Gas Mark 4.
In a small bowl, mix together the remaining ingredients, blending well then rub
evenly over all surfaces of the joint.
Place the joint in a shallow baking tin and roast for 1-1/2 to 2 hours. At the
end of the cooking time, remove from the oven, cover loosely with foil and allow
to rest for 10 minutes before serving.
