Lemon Pork Ribs HT MC 15mins plus marinating Serves 4 Hot Pork Fruit Main Course Dairy Free
Ingredients 1.5kg/3lb Pork Spare Ribs, separated Salt and Pepper 6tbsp Malt Vinegar 4 tbsp Sugar 2 teasp Dark Soy Sauce Finely grated zest and Juice of 2 Lemons 2 Eggs, beaten Plain Flour for dusting Oil for deep frying
Instructions 1. Chop the spare ribs into 7.5 cm/3 inch lengths. Season with salt and pepper and rub in well. 2. In a large bowl mix together the vinegar, sugar, half a teaspoon salt, pepper, soy sauce, lemon zest and juice. Add the spare ribs and leave to marinate for several hours. 3. Heat the oil to 140C, 275F in a deep-fryer . Dip the spare ribs into the beaten egg and dust with flour and deep-fry the spare ribs in batches for 3 minutes until the pork is cooked through and browned. 4. Drain on kitchen paper. Serve hot.
