Pork Baked in Foil HT ACC 40mins Serves 4 Hot Pork Herbs Main course Healthy Eating Dairy Gluten Wheat Free EgglessIngredients Olive Oil 675g/1½ lb Pork Fillet 8 Sprigs Marjoram 8 Sprigs Tarragon Salt and Black Pepper Juice of ½ Lemon Instructions 1. Preheat the oven to 190C, 375F, Gas mark 5. Heat a little olive oil in a frying pan and brown the fillet very quickly on all sides. Lay a piece of foil on a work surface, rub it lightly all over with oil, and arrange the sprigs of herbs over it. Sprinkle with salt and pepper. 2. Put the fillet on top, sprinkle with salt and pepper and the lemon juice then wrap up in the foil, sealing the ends so that no juice can escape. Put the foil parcel on a rack on a baking sheet and cook for 30 minutes. 3. Unwrap the parcel and pour the cooking juice carefully into a small jug to serve with the meat. Discard the herbs and foil. Carve the meat into diagonal slices and serve immediately.
