Ingredients:
450g/1lb
Pork Fillet
3
Pig's Kidneys
12
Bay Leaves
Olive
Oil
Salt
and Pepper
Instructions
1.
Cut the fillet into 2.5cm/1 inch cubes. Wash and dry the kidneys, cut them open and remove all the fat then quarter them. Preheat the grill.
2.
Thread the pork cubes, kidneys and bay leaves alternately onto the skewers. Brush with oil and season with salt and pepper.
3.
Grill for about 20 minutes, turning and basting occasionally. Serve hot.
