Skewered Pork with Ginger

tbsp Soy Sauce
tbsp Pineapple Juice
teasp Grated Root Ginger
Garlic Clove, crushed
tbsp Dry Sherry
tbsp Peanut Oil
1kg/2lb Pork Loin
6 pieces Preserved Stem Ginger, thinly sliced
Combine all the marinade ingredients together in a bowl. Mix well.
Cut the pork into 25mm/l inch cubes and place in the bowl. Pour the ginger-pineapple
marinade over the meat. Mix well and let the meat marinate in the
fridge for at least 4 hours, preferably overnight.
When ready to cook, preheat the grill to medium. Cut the stem ginger into thin slices. Thread the meat on to 4 skewers,
alternating with the ginger slices. Brush the
meat and ginger with the marinade.
Cook under the grill for 10-15 minutes,
until the meat is cooked through , turning the skewers and basting frequently with the marinade. Serve immediately.
