Skewered Pork with Ginger HT MC Chinese 15mins plus marinating
Serves 4 Hot Pork Alcohol Main course Chi Dairy Free Eggless China Asia Asian
Ingredients: For the marinade 6 tbsp Soy Sauce 6 tbsp Pineapple Juice 2 teasp Grated Root Ginger 1 Garlic Clove, crushed 1 teasp Mustard 4 tbsp Dry Sherry 1 tbsp Peanut Oil Other ingredients 1kg/2lb Pork Loin 6 pieces Preserved Stem Ginger, thinly sliced
Instructions
1. Combine all the marinade ingredients together in a bowl. Mix well.
2. Cut the pork into 25mm/l inch cubes and place in the bowl. Pour the ginger-pineapple marinade over the meat. Mix well and let the meat marinate in the fridge for at least 4 hours, preferably overnight.
3. When ready to cook, preheat the grill to medium. Cut the stem ginger into thin slices. Thread the meat on to 4 skewers, alternating with the ginger slices. Brush the meat and ginger with the marinade.
4. Cook under the grill for 10-15 minutes, until the meat is cooked through , turning the skewers and basting frequently with the marinade. Serve immediately.
