Stuffed Bacon Chops HT MC 50mins Serves 4 Hot Bacon Pork Vegetables Fruit Nuts Main courseIngredients 25g/1oz Butter 1 Onion, chopped 1 Garlic Clove, crushed 50g/2oz Button Mushrooms, sliced 1 Dessert Apple, peeled and grated 50g/2oz Fresh Breadcrumbs 25g/1oz Pine nuts, chopped 1 tbsp Fresh Parsley, chopped 1 Egg Salt and Pepper 4 Bacon Chops 4 tbsp Apple Juice
Instructions 1. Preheat the oven to 200C, 400F Gas Mark 6. Melt the butter in a saucepan add the onion, garlic and mushrooms and sauté until soft.
2. Remove from the heat, stir in the remaining stuffing ingredients and mix well.
3. Cut the bacon chops in half lengthways to form a pocket. Stuff the bacon chops with the prepared mixture then place in an ovenproof casserole dish. Pour over the apple juice and bake, uncovered, for 30-35 minutes. Serve immediately.
