Toad in the Hole

Ingredients

Oil or lard for greasing

100g/4oz Plain Flour
level teasp Salt
1 Egg
270ml/9fl.oz Milk
225g/8oz Sausages

 

Instructions

1. Preheat the oven to 200C, 400F, Gas mark 6 and heavily grease a shallow ovenproof dish or Yorkshire pudding tin, place the sausages in the greased dish in a single layer  and bake in the oven for 10  minutes.

 

2. Meanwhile, place the flour, egg, milk and salt in a large mixing bowl and whisk until smooth and lump free.

 

3. Remove the sausages from the oven and immediately pour over the batter. Return to the oven and bake for 40-45 minutes until well risen and golden. Do not open the oven door during the first 20 minutes cooking or the pudding may flop.

 

4. After 30 minutes  check the pudding isn't getting too brown and reduce the oven temperature in necessary. Serve immediately.

 

Serving suggestions

Serve with a leafy green vegetable such as cabbage or kale and an onion gravy

Add extra seasonings such as chopped herbs of chilli powder to the batter
