Caribbean Grilled Chicken HT MC West Indian 35mins plus marinating
Serves 4 Hot Poultry Main Course Gluten Wheat Dairy free Eggless Caribbean West Indies
Ingredients 180ml/6fl.oz. Vegetable Oil The Juice of 3 Limes 6 Garlic Cloves, chopped 1½ teasp Black Pepper 1 teasp Hot Pepper Sauce (check ingredient label) 3 teasp freshly chopped Oregano 1 Bay Leaf, crumbled 1½ tbsp Freshly Chopped Coriander 4 Large boneless Chicken Breast
Instructions
1. Place the oil, lime juice, and seasonings in a bowl and mix well.
2. Place the chicken in a shallow dish and pour the marinade over the chicken. Mix to coat well then cover and refrigerate for 2 to 3 hours.
3. Preheat the grill to hot and cook the breasts for 12-15 minutes on each side, basting with the marinade from time to time. Serve hot.
