Khmer  Grilled Chicken    HT  MC  Cambodian  30mins plus marinating


Cambodian Name: Mouan Ang



Serves 4   Hot  Poultry  Main Course  Dairy Free Eggless Cambodia  Asia




1 tbsp Vegetable Oil

2 tbsp Sugar

4 Garlic Cloves, crushed

4 tbsp Soy Sauce

Salt and Black Pepper

4 large Chicken Thighs





1. Place the oil, sugar, garlic, soy sauce, pepper and salt in a shallow dish and mix well.


2. Add the chicken and turn to coat, rubbing the mixture into the flesh. Cover with clingfilm and leave to marinate for 1 hour, turning once during the marinating period.


3. Preheat the grill to hot and line the grill pan with aluminium foil. Place the chicken in the grill pan  and cook for 20-25, turning from time to time or until the chicken is cooked through and browned on all sides. Serve immediately.

Key techniques

Chop to – To cut into pieces of approximately the same size.
Brown  to  -  To fry in very shallow  fat  over a high heat in order to colour the food and seal in the juices.

Sauté  - The cooking of food in a small amount of fat, preferably in a single layer, until it browns and softens. It is important not to overfill the pan.
