Lemon Basil Chicken     HT  MC  50mins plus marinating



Serves 4    Hot  Poultry  Main Course  Gluten Wheat Dairy free  Eggless



120ml/4fl.oz. Honey
60ml/2fl.oz. Lemon Juice
1 tbsp Freshly Chopped Basil Leaves
1 Garlic Clove, crushed
1/2 teasp Salt
2 tbsp grated Lemon Zest

4 boneless Chicken Breasts, skinned




1. Place all ingredients apart from the chicken in a mixing bowl and mix well.


2.  Add chicken breasts, turn to coat thoroughly then cover and refrigerate for  at least 2 hours, turning 2 or 3 times during the marinating period.


3. Preheat the oven to 180C, 350F, Gas Mark 4. Transfer the marinated chicken to a shallow ovenproof dish and bake for 35 to 40 minutes or until juices run clear. Serve hot.

Key techniques

Chop to – To cut into pieces of approximately the same size.
Brown  to  -  To fry in very shallow  fat  over a high heat in order to colour the food and seal in the juices.

Sauté  - The cooking of food in a small amount of fat, preferably in a single layer, until it browns and softens. It is important not to overfill the pan.
