Rabbit with Chocolate

8 Large Pieces of Rabbit
Salt and Pepper
2 tbsp Olive Oil
1 Onion, thinly Sliced
2 Carrots, thinly Sliced
2 Cloves of Garlic , crushed
2 Bay Leaves
300ml/10fl.oz. White wine
25g/1oz Dark Chocolate (70% cocoa solids) (check ingredients)
2 tbsp Freshly Chopped Parsley
1. Season the rabbit well with salt and pepper.
2. Heat the oil in a large saucepan the add the rabbit pieces and brown on all
3. Add the onion, carrots, garlic and bay leaves, stir to mix well then add the
wine and enough water to barely cover the rabbit. Bring to the boil then reduce
the heat, cover and simmer very gently for 1˝ hours, stirring from time to time.
4. At the end of the cooking time remove from the heat, add the chocolate and
parsley and stir well until the chocolate has melted. Serve immediately.
