Venison with Red Cabbage en Papillote Recipe

Sliced venison steak resting on a bed red cabbage flavoured with juniper, orange and port and cooked in a parchment parcel. Excellent for dinner parties served in the parcel.

Ingredients

450g/1lb Venison Steak
The grated zest and juice of 1 Orange
8 tbsp Port
8 Juniper Berries, crushed
Salt and Pepper
½ a small Red Cabbage, very finely shredded
2 Shallots, finely chopped
Softened Butter or Olive Oil for greasing
 

Instructions

 

1. Preheat the oven to 200C, 400F, Gas Mark 6. Cut the venison into strips about 2.5cm/1-inch thick and 5cm/2-inches long and place in a bowl together with the orange zest, juice, port, juniper berries, salt and pepper and mix well. Set aside.

2. Take four pieces of parchment paper about 45cm/18-inches square, fold each in half and cut into the shape of your choice such as a heart or oval. See picture below. Open up the papers, lightly grease one side of each with a little butter or oil, leaving a border about 5cm/2-inches wide.

3. Mix together the cabbage and shallots, season with salt and pepper then place on the greased halves of each parchment parcel close to the fold, making sure you leave the border clear.

4. Remove the venison from the bowl with a slotted spoon or tongs, arrange over the cabbage then spoon the reserved marinade over the top.

5. Fold over remaining half of the papers, lining up the edges, then fold over the edges in little pleats crimping as you work around the parcel to seal well. Place the parcels onto a baking tray and bake for 20 minutes until bags are puffed and browned.

Tips, Options and Substitutions

 

You can fold the papillotes into any shape you like – oblong would be good for this recipe

You can use aluminium foil instead of parchment paper

You can use ordinary onions instead of the shallots

 

Serving Suggestions

Serve with Duchesse Potatoes which can be prepared ahead of time and cooked in the oven along with the papillotes.
