Kangaroo Stew    HT   MC   Australian   360mins



Serves 4      Hot   Game   Vegetables  Main Course  Eggless Australia  Oceania



1kg/2lb Kangaroo meat, cut into 2.5cm/1inch cubes

400g/14oz Tinned Tomatoes

400g/14oz Tin Cream of Mushroom Soup

4 Carrots, cut into chunks

6 Potatoes, peeled and cut into chunks

300ml/10fl.oz. Tomato Juice

2 Sticks Celery, thickly sliced

2 Large Onions, thinly sliced

225g/8oz Green beans, thickly sliced on the diagonal





1. Place all ingredients in a large saucepan, mix well and bring to the boil.


2. Reduce the heat so the stew is just simmering, cover and simmer for 5˝ hours. Serve hot.


Alternatively, transfer to a casserole dish, cover and bake in the oven (140C, 275F, Gas Mark 1) for 6 hours. Serve hot.

Key techniques

Chop to – To cut into pieces of approximately the same size.
Brown  to  -  To fry in very shallow  fat  over a high heat in order to colour the food and seal in the juices.

Sauté  - The cooking of food in a small amount of fat, preferably in a single layer, until it browns and softens. It is important not to overfill the pan.
