Large Onion, chopped
Large Chicken Portions, halved
tbsp Mild Curry Powder
Garlic Clove, crushed
tbsp Lime Juice
teasp Cayenne Pepper
Creamed Coconut, grated
Melt the butter and oil in a large pan, add the onions and gently fry until soft
and transparent. Add the chicken pieces and brown on all sides.
Sprinkle on the curry powder then add the stock, sultanas, garlic, lime juice,
salt and cayenne. Stir well then cover and simmer over a low heat for 30
Add the grated creamed coconut, stir well and simmer, without boiling, for a
further 10 minutes. Serve hot.
