Mild Curried Chicken HT MC Indian 60mins Serves 4 Hot Poultry Dried Fruit Curries Main course Ind Asia Asian
Ingredients 1 Large Onion, chopped 25g/1oz Butter 1 tbsp Oil 4 Large Chicken Portions, halved 2 tbsp Mild Curry Powder 300ml/10fl.oz. Chicken Stock 1 Garlic Clove, crushed 1 tbsp Lime Juice Salt 1/4 teasp Cayenne Pepper 50g/2oz Sultanas 50g/2oz Creamed Coconut, grated
Instructions 1. Melt the butter and oil in a large pan, add the onions and gently fry until soft and transparent. Add the chicken pieces and brown on all sides.
2. Sprinkle on the curry powder then add the stock, sultanas, garlic, lime juice, salt and cayenne. Stir well then cover and simmer over a low heat for 30 minutes.
3. Add the grated creamed coconut, stir well and simmer, without boiling, for a further 10 minutes. Serve hot.
