Ostrich Feta Burgers      HT     MC    15mins



Serves  4      Hot   Game  Herbs   Healthy Eating   Barbecues  Main Course  Gluten Wheat Free  Eggless




675g/1˝lb Ostrich Mince

75g/3oz Feta Cheese, crumbled

2 tbsp Black Olives, finely chopped

1 teasp Dried Oregano

1 teasp Dried Thyme

2 Garlic Cloves, crushed

1 tbsp Olive Oil

 Salt and Black Pepper





1. Preheat the grill to hot.


2. Mix all  the ingredients together in a large mixing bowl until well blended.


3. Using damp hands,  form into four burgers.


4. Place on the grill rack and cook for 3-4 minutes on each side. Serve immediately.


Can also be cooked on the barbecue over medium/hot coals for around the same length of time.

Key techniques

Chop to – To cut into pieces of approximately the same size.
Brown  to  -  To fry in very shallow  fat  over a high heat in order to colour the food and seal in the juices.

Sauté  - The cooking of food in a small amount of fat, preferably in a single layer, until it browns and softens. It is important not to overfill the pan.
